Blissful Blueberry Multigrain Muffins!

Nancy and I made these fabulous blueberry bran muffins.  These are 100% whole food and we used organic ingredients where we could.  I found the wheat and oat bran and ground flax-seed at superstore but you can find them almost anywhere.  Here is the recipe:

Try these they are gooood!


1 1/2 cups wheat bran

1 cup oat bran

1/2 cup ground flax-seed

1 cup whole wheat flour

2 teaspoons baking soda

1 teaspoon baking powder

1/4  teaspoon salt

2 large eggs

1 1/3 cup buttermilk (low-fat)

1/3 cup applesauce

1/3 cup molasses or cane syrup

1/3 cup honey

1 teaspoon vanilla extract

2 cups frozen or fresh blueberries


combine dry ingredients and mix well

combine the wet and again mix well

add together with a spoon until thoroughly combined

stir in your blueberries

add to your pre greased muffin pans bake on the centre rack for 20-25 minutes @ 375F (350F in convection)

Let cool a few minutes in pan then remove to finish cooling on a rack.
