Creamy Pesto Chicken

So this recipe was inspired by us eating bland chicken.  Nancy was @ Pheonix grill one day and had a pesto chicken quesadilla, she loved it.  So I tried to emulate it at home.  After some tweaking and some creative flair here is what I did 🙂 – As always use free range chickens if you can and organic thin-skinned veggies.  Otherwise wash your veggies well and get hormone/antibiotic free chicken where possible.

ingredients

2 breasts of chicken  – cut into bit size pieces

2 red or orange peppers – cut into bite size pieces

1 large white onion – cut into bite size pieces

4 tablespoons of Pesto (homemade or Costco has a really good one)

3 tablespoons light cream cheese

to taste – red pepper flakes

to taste – sea salt

to taste – pepper fresh cracked

1 tablespoon of your favourite oil (Olive, coconut, safflower etc . . .)

preparation

In a non-stick skillet or stir fry pan season the chicken with the salt and pepper and then saute it until no more pink is visible.

Add your onions and peppers and continue sauteing until the veggies soften and the onions become translucent.

Reduce heat and add your pesto and stir in the cream cheese.  keep stirring until the chicken and veggies are well coated and chicken is cooked through about 15-20 minutes.

Sprinkle your red pepper flakes and serve over rice or steamed potatoes or just have it plain.  As the original inspiration attests it does well as a quesadilla filling as well 🙂
