Ok, so I have been leery making anything gluten-free but I found this great all-purpose flour from Namaste that allows you to substitute it 1:1 for regular flour. As such, I was able to make 4 mini loaves of this tasty bread. Now I did notice the crust being chewier but the insides were fluffy and tasty.
Gluten Free Banana Bread Recipe
2C Namaste foods – Perfect Flour Blend (regular use whole wheat flour)
1 ½ tsp baking powder
½ tsp baking soda
¼ tsp cinnamon
¼ tsp nutmeg
2 eggs beaten
4 mashed up, over ripe bananas
3/4C raw cane sugar
½C dark chocolate chunks (I use chipits special dark)
Prepare your pan by greasing and flouring the sides, I use a mini loaf pan but this will do one regular bread pan nicely
Combine the dry ingredients in your mixer and mix until combined
In a separate bowl combine all the wet ingredients, bananas and sugar
Once the wet ingredients are combined, add to dry and mix until just combined.
Add your chocolate chunks and finish the mix until all dry is mixed in.
Spoon into your pan and place into your oven at 350 degrees F for about 45 minutes if using mini loaf pans or 55 minutes if using a regular bread pan.
